Exploring the Diverse Uses of Underutilized New England Fish and Various Cuts of Lamb
This workshop will focus on two important issues. First, as the world faces harmful impacts on our environment, sustainable fishing practices and consumption patterns must become part of a chef’s daily concern to reduce the possible extinction of some species. Second, chefs must be able to properly use every part of an animal for different menu applications. After a quick demonstration on how to butcher a whole lamb, the participants will develop a menu using the different cuts based on their appropriate method of cooking to maximize yield, texture, flavor, and cost. In addition, they must incorporate the various local fish — perhaps unknown to some — in a variety of ways.
