Snacks: The Fourth Meal
Learn what is hot in snacks. How can we identify trends and capitalize on them? What are the latest flavors for snacks in restaurants and in retail snacks? How can we focus on preparing snacks that are not only popular, but also better for your health? In this hands-on session, participants will produce both sweet and savory snacks, and learn new ideas for flavors, presentations, and menus that will have a tangible impact on their dining centers.

Vegetables…put on the Spot!
In this workshop, participants will be exposed to the concepts of highlighting the nutritious, diverse, and flavorful nature of vegetables and fruits made into quick, accessible, and inexpensive snack-size foods. The cycle begins with a seed and extends from roots, up stems, to leaves, flowers and fruits. In how many ways can you use one single vegetable or fruit? Move away from the traditional ways of preparing vegetables by sampling new recipes that use bold flavors, new techniques, small amounts of animal protein, and wholesome foods such as grains and nuts.
