Dawn is responsible for all aspects of University Dining (Residential Dining, Retail Dining, Catering, Online and Food Truck) at University of Illinois, a Big Ten Institution. University Dining is an award winning dining service for sustainability, health, wellness & nutrition, menus, events and dining app. Dining has 9,000+ meal plans serving 40,000 meals daily. Dining serves the highest international student population in the US. Dawn works with campus academic partners to incorporate the dining experience into the academic experience, quantifying the experiential learning that dining offers.
Using continual process improvement, trends analysis, generational study and strategic planning University Dining has a culture of innovation. Dawn presents, writes and contributes to articles that demonstrate the importance of the college age generation as the birthplace of trends.
As the President of NACUFS, Dawn works to support excellence in University Dining and elevate dining services.
