Assistant Director of Culinary Operations, WSU
Chef Adam was born in the well-known town of Husavik, Iceland and from an early age traveled the world in a military home. This unique childhood allowed him to see a variety of cultures and cuisines and develop a respect for the influence of food in our community. Chef Adam attended Western Culinary Institute in Portland OR, applying the skills learned at local Portland restaurants such as Noodlin and Bistro 51. After graduation Chef Adam had the opportunity to sharpen his culinary skills with top chefs in the Seattle culinary scene as well as the opportunity to open Seattle’s award winning Volterra with Chef Don Curtis. Ownership called his name and he purchased and operated Top Notch Café in Colfax, WA for four years. The desire to spend more time with his wife and children while remaining in the culinary environment brought him to WSU as the Executive Chef of Southside for five years. He then spent an incredibly rewarding year working with Chef Jamie Callison and instructing the students in WSU’s Hospitality Business Management program at WSU. Currently Chef Adam is the Assistant Director of Culinary Operations at WSU. He continues his work with a team of extremely talented chefs creating menus that the students of today and tomorrow can connect with and appreciate. A major part of the culinary vision at WSU is utilizing the remarkable local culinary resources WSU and the greater Palouse have to offer.
